Chef Ken Yasukan with 50 years of experience

Fukuji believes that handling quality ingredients in good condition is more important than anything else. This is because pufferfish, the main ingredient in the dish, is served as a simple dish due to its light taste.

The store's master, Mr. Ken Yasukan, brings out the full flavor of the pufferfish and serves it to you with the insight and maturation techniques he has accumulated over 50 years since his days as an apprentice. Currently, 70-90% of the puffer fish on the market is farmed, but the puffer fish used at Fukuji Fukuji is made from natural white puffer fish caught off the coast of Kyushu, and the flavor of the puffer fish is enhanced by using a completely different ripening technology.
